What is Freeze-Dried Cowboy Caviar you ask? It's a healthy "dip" made with veggies & beans! You eat it cold. The nice thing is - you can customize it to YOUR liking!
First off, though it's EASY to make, there may be times in the year you cannot get the fresh ingredients (at least not right from your garden). Sometimes prices are higher, too! Let's dig in further...
The Recipe in a nutshell is as follows:
Finely chopped bell peppers (any colors you like)
Finely chopped onions (again any colors you like)
Tomatoes - diced! Fresh is preferable for flavor & texture.
Beans - Canned - 2 or 3 types - Usually Black Beans, Black-Eyed Peas, Kidney Beans or Northern White Beans
Corn - Often Fresh/Frozen works best (canned is soggy)
Avocado - but note if not eaten all in one sitting, it can become soggy. I add fresh right before eating it!
Seasoning - Garlic Salt (lightly) to your liking
Citrus Juice - Squeeze lime over it! (optional)
Italian Dressing - Make fresh and drizzle/mix over it!
When eating this dip, it's usually done so with a sturdy tortilla chip of your choice! Another GREAT way to use the leftovers, is to toss the ingredients into a fresh tortilla or taco shell!
